White Chocolate Cappuccino Bread Pudding

Also great as dessert finger food


Line 2qt casserole with cubed croissants (at least day old is preferable). 
Brioche or plain white bread works also.

Whip 1 qt of liquid eggs or 10-12 large eggs with 2 cup heavy cream, 2 cup strong coffee, 2 cups of brown sugar, and 3 tbsps of pure vanilla extract. Pour over cubed bread.  Sprinkle 1-2 cups of white chocolate chips or chopped white chocolate over top.  Bake at 325 for 1 hour or until firm. 

Optional additions: dried cherries, cranberries or hazelnuts.
